Amazing Cornbread Muffins
These amazing muffins are the perfect complement to a hearty bowl of stew or homemade soup. Just right to fill you up after a long day in the cold. They're a snap to prepare with simple ingredients. A great recipe to get the kids or grandkids involved in making their own food.

Makes 12 muffins
1 1/4 cups organic all-purpose flour
2/3 cup organic cornmeal
1/2 cup packed brown sugar
1 tbsp baking powder
1/2 tsp organic sea salt
1 large egg
1/4 cup oil- we use canola
1 cup milk or yogurt-we use milk
Stir all dry ingredients together in a medium bowl. Make a well in the centre.
Beat egg in a small bowl. Add oil and milk/yogurt. Beat together. Pour into well in flour mixture.
Stir just enough to moisten. Fill greased muffin cups 3/4 full.
Bake in 400F oven for 15-20 minutes until a wooden toothpick inserted in several muffins comes out clean.
Cool in pan for 5 minutes. Remove from pan to cool completely.
